Meatless Monday from the Garden

We are BACK to Meatless on Monday and I am THRILLED!  This week 100% of the meal I am sharing came from my garden or from my local farmer's market.

First we have Caprese Salad

I used fresh, locally made Mozzarrella with homegrown Basil and homegrown Tomatoes straight from the garden.  I soaked garlic in olive oil overnight and then drizzled over my creation.  YUM!

Next we have a baby Kale salad!


Next time I'll be adding legumes and SPROUTS in my salad.  I just started another batch of organic Mung Beans!

  1. Isn't it amazing that what once seemed so difficult is now second nature! I don't give a thought to having to put together a meal from fresh, organic, local food because that is all there is in the house. If only my garden was as far along as yours. sigh
