Servings: 8 to 10 side dish servings
Preparation Time: 25-30 minutes
Preparation Time: 25-30 minutes
Ingredients:
2 tablespoons coconut oil
4 cloves garlic, crushed
1 tablespoon grated fresh ginger
2 cups Quinoa
3/4 cup coconut milk
2 1/2 cups water (adjust as needed)
salt (optional)

Directions:
Sauté garlic and ginger in oil briefly. Add quinoa, stir
well. Add coconut milk, water and salt.
Bring to a boil, stir quickly, reduce heat and simmer
covered for 15 minutes. Remove from heat and let sit covered for 5 minutes or
more.
To reduce the total fat in this recipe, substitute Coconut Water for the Coconut Milk.

I first became aquainted with coconut oil when my dog had cancer. It was an ingredient in a recipe for a diet we put her on. I loved the texture and started using it for more things.

DeleteYes it is a wonderful product! I usually put a teaspoon of coconut oil in my coffee each morning and I claim it makes my hair shiny and my skin clearer. Thank you for the generous giveaway! God bless.

My favorite recipe to use it with I don't use for cooking - I use it on my skin! I use it in a shea butter and cocoa butter mix that I use as lotion.
ReplyDeleteI love to just mix with cocoa powder and maple syrup and eat. Adding nut or nut butters or coconut makes it extra tasty.
