I wasn't sure about sharing about my recent meatless adventure but what the heck...I've gone totally meat-free! Read Greening My Plate.
I'm taking it one day at a time!
A few reasons for this meat-free "adventure" are:
1. Health
2. Environment
3. Because I can!
I've been reading blogs like Vegan Mother Hubbard, which I found from Green Thickies, for tips and I'm very excited about going meat-free. I wasn't a big meat eater in the first place. We eat chicken mostly and red meat only a few times a year. To make this transition simple and easy without completely freaking my husband out I made a HUGE batch of slow cooker chicken and then separated several pieces in baggies and froze them. This way my husband can still get his meat and I don't have to cook it all of the time. PLUS it will save lots of time in the kitchen.
The key to going meat-free is "beefing" up your veggie intake (I couldn't help it!) while adding in plenty of meat-free protein like brown rice and quinoa. I love foods that I can make in advance and warm up when I'm hungry. This will save me from cheating with unhealthy snack options. Chips are vegetarian but they aren't very healthy.
I'll try not to bore you with too many details for now. On the the food!
