YUM! This was another successful veggie recipe. Even my husband ate it and he's not a big fan of cauliflower. I've seen a few recipes around so I figured I should try it out.
Mary's Roasted Cauliflower with Garlic
Ingredients:
Olive Oil
1 head of cauliflower
1-2 heads of garlic
cayenne pepper
salt and pepper
Parmesan cheese (optional)
Directions:
Preheat oven to 400.
Chop the cauliflower into florets and toss in a bowl with cloves of garlic. We really like garlic here so I used 2 heads broken up. Drizzle with olive oil and sprinkle with cayenne pepper, salt and pepper. Toss to coat.
Place on a baking pan/sheet in a single layer. Bake uncovered for 25-30 minutes. Remove from the oven and sprinkle with parmesan cheese. Serve hot!
Served with Simple Pesto Pizza
*The cold leftovers were a great addition to my salad*

I do this too! I love it! I also like fried cauliflower but this is a nice quick alternative!
